Founded by Virgilio and Malena Martínez, Lima’s Central brings together researchers, cooks and farming communities around a single undertaking: travelling the ecosystems of Peru, from sea level to the heights of the Andes, to document plants, crops and ways of working that have never been written down. I've always been drawn to what takes shape in the hands and in the honing of a craft. Central opened the doors of Mater, its research centre, and let me document this patient work: the harvests, the back-and-forth, the time it takes before a product ever reaches the plate.
